Preparation

    Put the flour, water, yeast, sugar, fine salt and melted butter in the bowl. Knead until the dough is soft and elastic.

    Cover and leave to rise for about 1 hour.

    Divide into 8 pieces. Roll each one into a long rope, thicker in the centre, then shape into pretzels.

    Bring a large saucepan of water and the bicarbonate of soda to a gentle simmer. Immerse the pretzels for 30 to 45 seconds, then drain thoroughly.

    Place on a baking tray, lightly score the thick section and sprinkle with coarse salt.
