Preparation

    Browning mode: brown the sliced onion and crushed garlic in olive oil for 2 minutes, until they are translucent and lightly golden.

    💡 Don't brown the onion too much — you just want to remove the raw and sweetness. A well-sweated (not caramelized) onion makes a smoother soup.

    Add the zucchini slices and the hot vegetable stock. Season lightly with salt (the melted cheese is already salty). Close the lid.

    💡 Taste before adding salt — depending on the melted cheese and stock cube brands, the soup may already be well salted. Better to adjust at the end of the recipe.

    Quick release. Add the portions of melted cheese to the still hot bowl. Blend with a hand blender directly in the bowl until you obtain a perfectly smooth texture.

    💡 Hold the lid in an inclined position when blending to avoid splashing. Start slowly and gradually speed up.

    Add the pepper and nutmeg. Taste and adjust salt if necessary. If the velouté is too thick, add a little hot water and mix again briefly.

Can we replace the melted cheese with something else?
Yes: thick crème fraîche (100 ml) gives a more neutral result. Fresh goat cheese (80 g) brings more character. Philadelphia type cream cheese (60 g) also works very well. For a vegan version, use cashew cream or coconut milk.
Should you peel zucchini?
This is not necessary — the skin of the zucchini is thin and disappears completely when blended. However, removing the skin results in a paler green soup with an even smoother texture. With the skin, the color is greener and the taste slightly more pronounced.
Does this velouté freeze well?
Yes, but without the melted cheese and cream. Freeze the zucchini-bouillon soup, then add the cheese when reheating. Blended soups containing melted cheese may have a grainy texture after thawing.
How to prevent soup from being bitter?
The bitter taste sometimes comes from very large or overripe zucchini. Prefer small or medium zucchini (less than 200g each) with shiny skin. Large summer zucchini have sometimes developed bitter cucurbitacins, especially in the seeds.
