Wash the herbs and dry them thoroughly in a tea towel. Strip the leaves from the stems (except thyme and rosemary).

Arrange in a single layer on the dehydrator trays.

Dehydrate at 35°C for 4 hr (low temperature to preserve the essential oils).

Crumble and store in airtight jars away from light. They keep for 1 year.
