Frequently asked questions

Why use the simmering basket instead of the TM6 measuring cup?
Vorwerk states that from 95°C upward, the simmering basket should be placed on the lid instead of the TM6 measuring cup. It lets steam escape while helping contain splashes.
What if the harissa starts to dry out while cooking?
Watch the final minutes closely: depending on the size and water content of the chilies, the mixture can reduce at different rates. If it becomes too dry or starts to catch, stop the cooking rather than putting the measuring cup back on at 100°C on a TM6.
How can I make this harissa less spicy?
Remove some or all of the chili seeds and use the optional green bell pepper. You can also choose milder red chilies while keeping the same Thermomix steps.
Is the green bell pepper required?
No. It is optional: it makes the harissa milder and increases the quantity. Without it, the harissa will be more concentrated and intense.
How should homemade harissa be stored?
Once cooled, keep it refrigerated in a clean, tightly closed jar. The drizzle of oil on the surface is part of the recipe, but it does not replace refrigeration.
