Preparation

    Slice the onion finely. Crush and chop the garlic. Grate the fresh ginger.

    Browning mode: pour in the oil, add the chopped onion. Brown for 3 minutes, stirring regularly, until lightly browned.

    Add the chopped garlic and grated ginger. Saute for 1 minute, then add the curry, turmeric and garam masala. Mix vigorously for 30 seconds to roast the spices.

    💡 Roasting the spices dry (or with very little oil) for 30 seconds releases their essential oils and multiplies their aroma. This is the most important step for a tasty curry.

    Add the drained chickpeas, crushed tomatoes and coconut milk. Salt, mix. Close the lid.

    💡 Quick release of pressure. The sauce will appear liquid when opened — it will thicken in 2 minutes with Simmer Mode if necessary.

    Taste and adjust salt. If the sauce is too liquid, activate the Simmer Mode for 3 minutes uncovered to reduce it. Serve over basmati rice, sprinkled with fresh coriander.

Frequently asked questions

Can you use dried chickpeas instead of canned ones?
Yes, but you have to soak them for 12 hours in cold water, then cook them alone in the Cookeo under pressure for 35 minutes before starting the recipe. Canned chickpeas are already cooked and save a lot of time.
How to make this curry spicier or milder?
For more heat: add cayenne pepper or chopped fresh pepper in step 3. To sweeten it: replace part of the whole coconut milk with light coconut milk, and use a mild Korma type curry.
Can we add vegetables to this recipe?
Absolutely. Diced sweet potato, spinach (added after cooking), cauliflower or zucchini go very well. The root vegetables are cooked before pressure cooking, the tender vegetables (spinach, peas) are cooked just after, in Simmer Mode for 2 minutes.
Does this dish keep well?
Yes, it's even better the next day. Keeps for 3 days in the refrigerator in an airtight container, and freezes perfectly for up to 3 months. Reheat with a little water if the sauce has thickened too much.
